Recipe Name:  CHILE RELLENOS
 
4 Anaheim chiles
Cheese (Feta, Mzzarella, or Jack)
2 eggs
Flour
8 oz. beer
Oil for cooking

Char chiles over flame until blackened. Place in paper sack for 1 to 15 minutes. Prepare batter. Separate egg whites and yolks. Beat egg whites until stiff peaks form. Combine egg yolks, beer, and enough flour to form a pancake batter consistency. Fold egg yolk mixture into stiffened egg whites.
Run blackened chiles under cold water to peel; skins should slip off. Cut the top and remove seeds. Stuff with cheese. Dip in the batter and fry in cooking oil until browned.
